History of Adamas Caviar and Cocktails
The Giovannini family began its adventure in aquaculture in the 1950s. However, it wasn’t until the second half of the decade when Alessandro Giovannini's visionary idea resulted in the first trout farm in Lombardy. Salmo Pan was initially a trout farm, before being converted into a sturgeon farm at the beginning of 2000. Since then, Adamas’ exclusive Italian caviar has been Sustainably farmed, respecting ancient caviar traditions, & is today overseen by Matteo (Alfredo Giovannini's son), who represents the third generation of breeders.
About the Region
Located in Northern Italy, Adamas Caviar is sustainably farmed at their farm in Pandino, (in the heart of the Tormo River Natural Park), giving them total control over the quality & consistency of its caviar. This river originates from numerous natural water springs that feed it throughout its course. It’s these springs where water comes to the surface, after being filtered by nature.
