Every story has its origins. The centuries-old meadows of south-west Spain are not only idyllic but ideal conditions for 100% ibérico pigs. However, it’s the acorn that is the hidden secret behind the ham’s incredible flavour. Five different types of oak nut acorns occupy these meadows & once mature, the acorns fall from the tree for the pigs to enjoy.
