Flavour profile

Tasting: A rich wine that is sold when the vintage reaches maturity. The palate
is full-bodied with notes of redcurrant, cedar and sweet spices. The palate is linear and powerful, beautifully elegant. The wooded notes are well-controlled and perfectly blended with the fruit.

Aging Process:

The grapes are hand picked in the second half of September and can thus be sorted in necessary. Once delivered to the winery, the grapes are destemmed then chilled. The juices are vinified for three weeks in small quantities in temperature-controlled vats. If necessary, moderate cap-punching is performed during the maceration phase. The wine is transferred by gravity flow from the vats to maturing barrels (barriques and demi-muids). The juices then undergo malolactic fermentation. The resulting wine is matured for at least 14 months..
